Take a backup image of my Windows 8 (BIOS) SSD with CloneZilla. Create room on the Windows 8 SSD for an ESP. and enable Secure Boot. Reinstall CentOS7 to the other SSD, this time removing /boot/efi from the partition options and mounting the Windows 8 ESP at /boot/efi instead. I’m not sure if I will still need to install ntfs-3g and utils etc. Then and add Windows 8 to Grub2 afterwards, but that should be easy either way once EFI is setup in this way.

Update: The process I outlined above worked perfectly. I now have CentOS 7 and Windows 8 (both EFI) dual-booting with Secure Boot enabled. With separate SSD's I was unable to get CentOS to share windows' ESP as the installer refused to continue with that config. But each OS with their own small ESP worked flawlessly and ntfs-3g etc. Were not required as both ESP are fat32, so when I rebooted after the CentOS install the grub2 loader was pre-configured with both OS included and required no manual configuration by me.
